White Teas
Everyone has heard of black tea and green tea, but what is white tea? White tea is simply the least processed of all teas. It, like black and green, is from the Camellia sinensis plant. But the leaves are picked before they fully open, when the buds are still covered by a fine white hair. Hence the name. White tea is scarcer than the other teas and usually more expensive. But the difference is worth it.
Black teas are fully fermented, green teas are marginally fermented, and
oolongs are somewhere in the middle. White tea is in a class by itself
as it undergoes very little processing and no fermentation at all.
Most green teas have a distinctive grassy taste, while white tea does not.
The flavour is light and sweet. White tea should be steeped in water
well below the boiling point, preferably around 180 degrees Fahrenheit.
